2 tbsp black peppercorns
1/4 cup kosher salt
1 tbsp garlic powder
1 tbsp onion powder
1/2 tbsp light brown suga
1/2 tbsp smoked paprika
Prep Time: 10 Minutes
Cook Time: Over Night
Total Time: 12 Hours
Finely grind the peppercorns in a spice mill or grinder.
Combine pepper with other ingredients in a bowl.
Place turkey or portion of turkey on roaster or backing sheet with wire rack. Cover liberally with brine.
Let turkey brine, 24 to 48 hours before roasting. Follow roasting recipe here:
